REICPE #32 IN THE GOBSMACKED COOKIES & OTHER TREATS ON www.amazon.com/kindle








Recipe #32 plus 1/2 cup extra butter and 1/2 cup extra dark brown sugar, 3 tbsp unsweetened cocoa powder.

Bake then dip and drizzle with melted white chocolate and dust with more cocoa powder.

These are for a production of Jack Frost, a ballet tomorrow in Glendale Ca. by California Contemporary Ballet Comp.

FIRE AND ICE Snack cakes (Fresh Ginger and Carrot with cream cheese frosting) RECIPE



This is like a carrot cake with Rocket fuel as the fresh ginger knocks it out of this world.
It is a great cross between gingerbread and a fruited carrot cake, you may add orange zest to it and decorate it with the same but why spoil something this great?

use a well buttered 13x9x2inch ovenproof dish


Preheated oven 350F


3 cups all purpose flour (or 50:50 wholewheat and all purpose..if using this add 3tbsp milk extra)
 Sift into this:
2tsp baking powder
2tsp baking soda
3tsp grated ginger
1/2 tsp salt
2 cups packed brown sugar
2 cups grated raw carrot
1/2 cup  chopped crystallized ginger
2inches fresh ginger root grated, & juice
1 cup raisins (or chopped apricots or chopped prunes, or chopped dates)
 Mix very well and set aside.


Whisk together very well:
3 large eggs beaten
6tbsp vegetable oil
1 cup milk
Then stir this into the dry ingredients. Mix very well.
Then pour into the greased dish.
Smooth out the top and bake middle of oven on a lined cookie sheet for 1 - 1/4 hours or until top is firm to touch and a wooden toothpick comes out clean.

remove from oven and cool in pan on wire rack.


Frosting:
1 pound cream cheese at room temp
8tsp/ 3/4 cup powdered sugar
flavoring of choice ( lemon extract,vanilla extract, almond extract, citrus zest & etc.)


Beat the cream cheese until light and whipped and gradually add the powdered sugar.

Add any flavorings (sometimes vanilla can darken the frosting), I prefer mine without any flavorings and just let the fresh ginger in the cake take over.

When completely frosted and chilled cut into bars or squares, and keep them small, not handfulls..lol.

These little cakes pack a big punch and are great for parties, if you double the recipe still bake in 2 pans.

All butter, sugar and oatmeal with ground ginger and cloves, produces a cakelike cookie

Drizzle with cream icing (powdered sugar and fresh cream OR try it with cream, rum and sugar)


Cool completely then drizzle with melted unsweetened chocolate, I added a knob of unsalted butter to add more of a sheen.

These are grown up cookies and perfect with hot coffee of hot chocolate, this approach can be done to any cakelike cookie, these are usually not as sweet as the crunchy ones, so these additions add layers of flavors.

HAPPY REINDEER COOKIES aka OATMEAL & RUM COOKIES RECIPE TO KEEP RUDOLPH'S NOSE MERRY & BRIGHT



Here are bite sized morsels packed with flavors and the addition of dark real rum is optional.



Use a teaspoon to make the marble-walnut sized balls that become the cookies..do not make them too large as these are so very tasty, small.

this makes 18-24 depending on your teaspoon and taste testers.

Preheat oven 375F

In a mixing bowl add:
1 cup all purpose flour
1/2 cup granulated sugar
1/2 packed brown sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt.
Mix well together, then using an electric mixer, beat in 
1/2 cup unsalted butter
1 large egg
1/2 tsp vanilla extract or 1/4 cup dark rum/whisky/brandy
Mix very well,so everything is combined and smooth.
Fold in 
3/4 cup quick cooking (NOT INSTANT) rolled oats
1/2 cup chopped nuts
Mix well then using teaspoon form into balls. 
When all the batter is shaped, roll the tops in a mix of white sugar and any ground spice you prefer, I used ground allspice, but cinnamon, cloves, or ginger is fine (ground cardamon and coriander add wonderful exotic flavors too).

Place the sugared balls onto ungreased cookie sheets about 2 inches apart and bake for 10-12 mins or until edges are lightly golden.
Remove from oven and transfer to wire rack.
Cool completely.
These are crunchy on the outside and chewy inside.
So very surprisingly tasty, and so simple and easy to make.
I baked them a tray at a time.
This recipe is great also doubled.

For added Gobsmackedness try them sandwiched with Nutella or melted bittersweet chocolate.
Also great sandwiched with peanut butter then dipped in semi sweet chocolate too.




I didn't like them made with wholewheat flour as they became dry and crispy all the way through, I prefer them chewy inside.

These would be great with a chocolate fondue and served with berries or fresh pineapple as they are so crispy.

RECIPE: DOUBLE CHOCOLATE-COCONUT SMOTHERED GOBSMACKED SQUARES

These grown up "cookies"  are best for any chocolate "emergency" that occurs.
They can be frozen in waxed paper individually (never know when you might NEED them in a hurry).

makes up to 20 small cookie squares

one 9x9x2inch pan ungreased



PREHEAT OVEN 350F

1 stick softened butter (4ozs)
1/2 cup powdered sugar
1 cup all purpose flour (plus 1tsp baking powder)
2 tbsp unsweetened cocoa powder
2tbsp dark rum/whisky, brandy  OR 1tsp vanilla extract

Cream the butter with the sugar until light and fluffy.

Add the flour, baking powder and cocoa powder, mix well then pat into the bottom of the pan.
Bake 12-15 mins.
Remove from oven and pour over the  following cold combination (mixed well together):
1 x 14ozs sweetened condensed milk
1 x 12 ozs package semi-sweet chocolate chips
1 1/2 cups shredded unsweetened coconut or chopped nuts
3tsp same alcohol as in cookie crust or  1 tsp vanilla extract.


Return to oven and bake for 25-30 mins, until lightly brown around edges.
Remove from oven and cool in pan on wire rack.
They will "set up" as they cool.

Cut into small bars/pieces when cold. (these are very dense and rich cookies and best eaten in smaller bites.. 1- 1/2  inches square)

Variations:
This is also great with alcohol soaked raisins/chopped apricots/chopped figs added to the cookie crust before baking.
Also try with a good chocolate liqueur or even chocolate vodka in place of rum.
For completely 'over the top", try then enrobed in more chocolate, allowed to chill and served (several squares) ice cold with vanilla bean ice cream in sundae glasses.

FLAP JACKS aka Oatmeal Macaroons RECIPE



I had these as a child growing up and I think that they are one of the first things I ever baked.
This is the basic recipe and there are many ways to vary it.
This is one of those cookies where real Butter is a MUST, for flavor.
makes 24  small snack size cookies

1 cup packed brown sugar (1/2 pound)
1/2 cup butter, 1 stick (regular salted butter is best for this)
2 cups quick cook oatmeal (not instant oatmeal)
1 tsp baking powder


1 8x8x2 inch well buttered pan

PREHEAT OVEN 350F middle shelf

In a heavy bottomed saucepan, gently heat the butter and add the sugar, and stir until the sugar has dissolved.
Remove from heat and add the oats and baking powder and stir briskly to incorporate everything very well.


Turn into the pan and spread a level top.
Bake for 20-25 mins until golden and bubbling. (they will not appear set, but will harden as they cool)
Cool in pan on wire rack, cut into pieces while warm.
Break apart when cold.

Variations:

add any one of the following:
1/4 cup  toasted coconut
1/4 cup  any toasted nuts finely chopped
1/4 cup chopped dates/prune/apricots
1/4 cup minced raisins 
1/4 cup chopped crystallised ginger 
1/4 cup chopped peppermint candy canes
1/4 cup M&M's candy coated chocolate drops

Drizzle with melted chocolate when baked and cooling down, and allow it to set up,  before breaking apart.


these may also be baked in mini muffin cups, 1 inch deep and baked for 10-15 mins.

These are a rich, almost shortbread, cookie with hints of dark rum.

1/2 cup butter softened
1 cup powdered sugar
4tbsp  dark rum 
1 1/2 cups all purpose flour
1/4 tsp salt
3/4 cup any roasted nut finely chopped

1 egg beaten
2tbsp water
dark brown sugar


preheat oven 375F

Method
Cream the butter and powdered sugar until light and fluffy.
Add the rum and beat in.
Stir in the flour and salt to combine then fold in the nuts.
The dough will be short and a bit sticky.
Roll out between 2 layers of waxed or parchment paper to 1/4 inch thick on a lightly floured board.
Remove top layer of paper and cut into desired shapes with either a sharp knife or cookie cutter.

These make a great grown-up alternative to gingerbread cookies and can be hung from the tree too, using a nice red ribbon

Place the cookies on an ungreased cookie sheet.
Mix the egg with the water, brush the tops of  cookies lightly and sprinkle with the dark brown sugar.
Bake 12-14 mins until lightly golden.
Cool on tray for 5 mins then on wire rack.

Variations:

Add any other hard liquor in place of rum, whisky, brandy & etc.
May also be drizzled with melted chocolate when the cookies are cold, in this case omit the brown sugar.
Add 1/2 cup any dried fruit chopped fine, dried cherries make the festive for the Holidays, crystallised ginger give them an adult flavor (this would be great with ginger wine in place of rum)
In place of chopped nuts use any seeds, for large seed (sunflower) chop finely before adding.
Do not add chocolate chips as these cookies are baked at a high temp and chocolate will burn.
