FLAP JACKS aka Oatmeal Macaroons RECIPE
I had these as a child growing up and I think that they are one of the first things I ever baked.
This is the basic recipe and there are many ways to vary it.
This is one of those cookies where real Butter is a MUST, for flavor.
makes 24 small snack size cookies
1 cup packed brown sugar (1/2 pound)
1/2 cup butter, 1 stick (regular salted butter is best for this)
2 cups quick cook oatmeal (not instant oatmeal)
1 tsp baking powder
1 8x8x2 inch well buttered pan
PREHEAT OVEN 350F middle shelf
In a heavy bottomed saucepan, gently heat the butter and add the sugar, and stir until the sugar has dissolved.
Remove from heat and add the oats and baking powder and stir briskly to incorporate everything very well.
Turn into the pan and spread a level top.
Bake for 20-25 mins until golden and bubbling. (they will not appear set, but will harden as they cool)
Cool in pan on wire rack, cut into pieces while warm.
Break apart when cold.
Variations:
add any one of the following:
1/4 cup toasted coconut
1/4 cup any toasted nuts finely chopped
1/4 cup chopped dates/prune/apricots
1/4 cup minced raisins
1/4 cup chopped crystallised ginger
1/4 cup chopped peppermint candy canes
1/4 cup M&M's candy coated chocolate drops
Drizzle with melted chocolate when baked and cooling down, and allow it to set up, before breaking apart.
these may also be baked in mini muffin cups, 1 inch deep and baked for 10-15 mins.
