HAPPY REINDEER COOKIES aka OATMEAL & RUM COOKIES RECIPE TO KEEP RUDOLPH'S NOSE MERRY & BRIGHT
Here are bite sized morsels packed with flavors and the addition of dark real rum is optional.
Use a teaspoon to make the marble-walnut sized balls that become the cookies..do not make them too large as these are so very tasty, small.
this makes 18-24 depending on your teaspoon and taste testers.
Preheat oven 375F
In a mixing bowl add:
1 cup all purpose flour
1/2 cup granulated sugar
1/2 packed brown sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt.
Mix well together, then using an electric mixer, beat in
1/2 cup unsalted butter
1 large egg
1/2 tsp vanilla extract or 1/4 cup dark rum/whisky/brandy
Mix very well,so everything is combined and smooth.
Fold in
3/4 cup quick cooking (NOT INSTANT) rolled oats
1/2 cup chopped nuts
Mix well then using teaspoon form into balls.
When all the batter is shaped, roll the tops in a mix of white sugar and any ground spice you prefer, I used ground allspice, but cinnamon, cloves, or ginger is fine (ground cardamon and coriander add wonderful exotic flavors too).
Place the sugared balls onto ungreased cookie sheets about 2 inches apart and bake for 10-12 mins or until edges are lightly golden.
Remove from oven and transfer to wire rack.
Cool completely.
These are crunchy on the outside and chewy inside.
So very surprisingly tasty, and so simple and easy to make.
I baked them a tray at a time.
This recipe is great also doubled.
For added Gobsmackedness try them sandwiched with Nutella or melted bittersweet chocolate.
Also great sandwiched with peanut butter then dipped in semi sweet chocolate too.
I didn't like them made with wholewheat flour as they became dry and crispy all the way through, I prefer them chewy inside.
These would be great with a chocolate fondue and served with berries or fresh pineapple as they are so crispy.
